Slow Cooker Butter Chicken

Perfect for those who want to head out the door for work and come home to a delicious dinner!

Here is what you will need:


Ingredients: serves 2

  • 2 tablespoons vegetable oil

  • 2 tablespoons butter

  • 1 onion, cut into thick slices

  • 4 chicken thighs

  • 2 tablespoons mild curry powder

  • 3 tablespoons tandoori paste

  • 2 teaspoons garam masala

  • 1 cup tomato paste

  • 1 teaspoon dried cardoman

  • 1 can (400ml) coconut milk

  • 1 cup natural greek yoghurt.


Method:


In a frying pan heat the oil and butter and bring to a medium heat. Add the curry powder, cardamon powder, tandoori paste, tomato paste, garam masala and cook for 2 minutes. Now add the chicken and brown slightly.


Add the coconut milk with the yoghurt and half a cup of water. Pour the whole lot into the slow cooker. Cook on low for 6-7 hours.


Serve with Naan bread or basmati rice and top wth fresh coriander/cilantro (optional).
