With bacon, cheese & onions you won't miss the potatoes!
Here is what you'll need:
1lbs/450g cauliflower florettes
4 ounces /110g sour cream
1 cup grated cheddar cheese
4 slices bacon
4 tablespoons chives, chopped
3 tablespoons butter
1/4 teaspoon garlic powder
salt and pepper to taste
So for this recipe I am using a device in the kitchen I rarely, if ever use - the microwave! Why? Because its quick and convenient to steam the cauliflower but of course you can use a steamer over the stove, I just place in cauliflower florets and cover with cling film. Now I steam it because I don’t want to boil the cauliflower and have it become water logged, especially since I want this to be like a creamy mash potato consistency and don’t want it watery.
So place it the microwave for 10 minutes or until the cauliflower is tender. While its in the microwave, dice up your bacon and place into a pan over a medium to high heat and cook until crispy but still juicy in the middle. Then into a food processor place the cauliflower in, season with salt and white pepper and blitz until it starts to break down, stop, then add butter, garlic powder and also sour cream. Process until smooth and creamy then place into a bowl, mix through some chopped fresh chives which gives the dish a great subtle onion flavour.
Pour the cauliflower mash into a serving bowl and top with grated cheese, I’m using a sharp cheddar but you go for what you prefer. Top with the cooked bacon and place under the grill for several minutes until the cheese has melted, garnish with more fresh chives and let everyone get stuck into it, it makes an amazing size dish or a meal in itself.
Its lower in carbs than mashed potato, making it keto friendly also and like I said, I’m sure it will soon become a favourite meal in your home.
