Chicken Waffle Cones

This soul food classic recipe of Chicken & Waffles is perfect for sharing!

Here is what you will need:

Ingredients: makes 4

500g (1lb) boneless chicken thighs, skin removed and diced into 'popcorn' chicken size

2 tablespoons corn flour

2 eggs. beaten

2 cups panko bread crumbs

4 waffle cones

2 tablespoons Maple syrup

4 lime slices

Vegetable oil for deep frying

Spicy Mayo

1 cup whole egg mayonnaise

2 teaspoons Sambal Oelek or sriracha hot sauce

1 teaspoon lime juice

Spice Mix

1/2 teaspoon ground tumeric

1 teaspoon garlic powder

1/2 teaspoon freshly ground black pepper

1/2 teaspoon onion powder

1/2 teaspoon chilli powder

1/2 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt


Into a bowl with the Panko crumbs add the spices and mix well. Place the chicken in the corn flour and roll around until coated, dust off the excess and place in the beaten eggs. Again coat throughly and now place in the panko crumb spice mix. Coat all sides and place on a baking tray for 5 minutes before frying.

Heat the vegetable oil to 180C/350F and in batches fry the chicken for 2-5 minutes or until golden brown and cooked through. If your chicken pieces are larger, then obviously they will need more cooking time. Remove and place on paper towel.

Place the mayonnaise, sambel oelek and lime juice in a bowl and mix until combined.

Place the fried chicken pieces in the waffle cones, drizzle with chilli mayo, lime juice and maple syrup. Serve immediately.
